Every year we will be trying to improve our wines more, and we are really happy to say that so far the reactions on our wines from the harvest of 2018 are amazing! We elaborate our wines in a very natural way without the use of commercial yeast or bacteria. This means that the fermentation is done by yeast that are already naturally present on the peel of the grape. Obviously, because of this, it is very important to take excellent care of our vineyards and control the optimal moment for collecting the grapes by hand. For examples, from feedback we got from our 100% tempranillo white, we wanted to boost the acidity a bit. So by collecting the grape at an optimal acidity level, we achieved the goal of making a very bold white tempranillo wine this year!
